The key: Adjust proportions to suit your taste. We tend to like our drinks on the less-sweet side, so we’ll knock back the sweet ingredient by 30% to 50%. Your mileage may vary, depending on your palate and the spirit you’ve chosen, so tweak it a little. As Granddaddy liked to say, “You can always put more in, but you can’t never take it back out.”

Gold Rush: Lemon Juice Version
2 oz Bourbon
¾ oz Lemon Juice
Shake with ice until chilled; strain into a cocktail glass.

2 oz Vodka (or 2 oz Bourbon for a Kentucky Mule)
