Much as we love it in an Old Fashioned, one of our favorite Maple Bacon Proof Syrup cocktails is the Al Pastor Sour: smoky, sweet, tart, delicious, fantastic with spicy meals and barbecue.

Whether you’re a longtime mezcal sipper or new to this smoky Mexican spirit, you’ll love this cocktail. And if you're experiencing a temporary embarrassment of mezcal — or a longer-term reluctance to go full smoky — know that this recipe's equally delicious with tequila, or a 50-50 tequila-mezcal split. 

 

Ingredients

  • 1/2 oz Maple Bacon Proof Syrup
  • 1 1/2 oz Tequila or Mezcal
  • 1/2 oz Aperol or Campari
  • 1 1/2 oz Fresh Pineapple Juice
  • Lime Wheel to Garnish

 

Tools

  • Jigger
    Cocktail Shaker
    Strainer
    Double Old Fashioned Glass

 

Steps

  1. Measure tequila or mezcal, Proof Syrup, Aperol or Campari, and pineapple juice into a cocktail shaker; add ice and shake until well combined.
  2. Strain into an ice-filled double Old Fashioned glass.
  3. Garnish with lime wheel.
