Lavender Proof Syrup doesn’t merely add flavor to your favorite spirits — it finds new flavors within those spirits and draws them out, to delicious effect. Our handmade lavender tincture deserves the credit there; it heightens the floral sweetness of lavender, giving the herbs in spirits like gin something to play off of. Lavender Proof Syrup mixes well with tequila, mezcal, and vodka, too — like in this simple, elegant riff on a classic Greyhound.

Lavender Greyhound: Shake 2 oz vodka, 1 oz Lavender Proof Syrup, and 1 oz grapefruit juice with ice. Strain into an ice-filled rocks glass and garnish with lime, lemon, or grapefruit wedge.

LAVENDER HAS A LONG, COLORFUL HISTORY

Lavender isn’t your run-of-the-mill culinary herb, not now anyway, but mix up a couple cocktails with Lavender Proof Syrup and you’ll wonder why these pretty purple flowers aren’t in everybody’s spice rack. For at least 2,500 years, cultures throughout the mediterranean region used lavender for everything from mummification (lookin’ at you, ancient Egypt) to bathing to warding off plague. How well it worked for that is anybody’s guess (we’re going with “not so hot”), but Queen Elizabeth I loved the stuff: she wore lavender perfume, required fresh lavender throughout her residence, kept a lavender jam on the table at every meal, and drank mass quantities of lavender tea as a migraine treatment. Seems likely she’d have enjoyed a lavender-tinged cocktail, too.

Ingredients

* 2 oz Gin

* ½ oz Lavender Proof Syrup

* ½ oz Honey Proof Syrup

* ¾ oz Lemon Juice

* Lemon Twist & Lavender Sprig to Garnish


Steps

1. Shake gin, Proof Syrups, and lemon juice with ice.

2. Strain into a chilled coupe glass.

3. Garnish with lemon twist and lavender.
